Fun Facts about Chili --- Chili or Chili Con Carne is a spicy Texan dish, originally designed as trail meal for cowboys, made of chopped/ground meat seasoned with chilies or chili powder. Beans were added to stretch the number of servings. The two types of traditional chilies are the Red Chili and Chili Verde.

Beans were added to stretch the number of servings. The two types of traditional chilies are the Red Chili and Chili Verde.
- Traditional Red Chili, as defined by the International Chili Society, contains any kind of meat or combination of meats, cooked with red chili peppers, various spices and other ingredients. PASTA is strictly forbidden in the chili.
- Chili Verde, as defined by the International Chili Society, contains any kind of meat or combination of meats, cooked with green chili peppers, various spices and other ingredients. PASTA is strictly forbidden in the chili.
The rules are as follows:
CHILI COOK-OFF RULES
- The Chili Cook Off will be held during an Open Meeting and parishioners will be invited to participate and/or attend the cook off.
- Attending Knights and guests will be the judges. Every attendee will be given one ticket as they enter the hall. The ticket is how they will vote for their favorite chili.
- All chili must be prepared at home and brought to meeting in a pot or a crock pot. The Kitchen stove will not be available to reheat chili.
- Each participant must produce one large pot or crock pot of the chili of their choice. Each participant must supply serving utensil for their chili. Each participant must provide a copy of their recipe to the Warden.
- Each participant must supply any toppings and sides that go with their chili.
- Each pot will have a number and a bowl for the judge’s “votes”.
- Chilies are due by 7:00 PM to give the Warden adequate time to number the chili and set up tasting area.
- Each judge will vote by placing their ticket in a bowl by the chili they are voting for.
- Participants should the following: taste (good flavor), consistency, aroma, and color.
- The Grand Prize will be awarded for the chili with the most votes.
- The Knight with the highest votes will win the Council award (bragging rights!).
- Winners will be announced before the Business Meeting begins.
- Each participant is responsible for clean-up of their utensils and pots at the end of the cook-off.
